Creamy Sausage and Noodle Meal

I love sharing easy and affordable meals with you, this one I had help from my oldest granddaughter. She dropped in for a visit and stayed for supper. But we decided it was a good time to have her help cook it too. So take a minute to watch our short video tutorial to follow a long.

One pound of sausage is plenty but you can use more if you wish. I'm using a honey garlic sausage that was on sale but you use a sausage you enjoy eating.

The ingredients I'm using can be substituted with ingredients you have available in your kitchen. Like the cauliflower can be broccoli, zucchini or a veggie you like.
The cheese can be what you have in the fridge available, the noodles can be the one you like serving. So see where I'm going with this....

Our granddaughter is frying the sausage until they are partly cooked, then tossed in the chopped red onion to fry until soft. I'm using a red onion you can use any type of onion.

After back to the frying pan!!

See how lovely the sausage, onion, red pepper and celery looks in that pan, thats not all. We are adding one tablespoon of butter to make a sauce.
Next add two tablespoons of flour.

Ingredients
- Sausage - 1 pound, of choice
- Onion - 1 medium, of choice
- Red pepper - ½ chopped
- Garlic Cloves - 1 pieces
- noodles - 2 cups, any type
- Celery - 1 stick, diced
- Fresh Ginger - ¼ tsp, optional
- Sea salt - ½ tsp, split between pasta water and meal
- black pepper - ½ tsp
- onion powder - ½ tsp
- olive oil - 1 tbsp
- butter - 1 tbsp
- milk - 2 cups
- flour - 2 tbsp
- starch water - ¼ cup
- shredded cheese - ½ cup, of choice
- parmesan cheese - ¼ cup
- green peas - ¼ cup, frozen
- tomatoes - 6 small, quartered
- cauliflower - 6 or 8 pieces, optional
- green onion - 1 stick, diced
Instructions
Method:
Prepare your sausage by cutting it in cubes and remove the casing, place in a hot oiled pan, cook on a medium stovetop heat. Let fry until almost cooked then add in your chopped onions, red pepper chopped, frozen green peas and seasonings.
When sausage is cooked and the onions are soft, add the seasonings, crushed garlic, celery and ginger (optional).
After add butter and the flour and mix in good, then add the milk and starch water to pan and continue folding the ingredients until the sauces starts to thicken. Lower heat until the noodles are cooked.
Add cheese of choice, and parmesan, green peas, chopped baby tomatoes,
In another pot with water, start to boil with a pinch of sea salt to season the water. Then add your noodles of choice. I’ve used all types and they all work great.
Cook noodles following the box instructions. When almost cooked toss in the chopped cauliflower to cook, remove when noodles are ready.
Drain water off noodles keeping about quarter of a cup to add to sausage sauce mixture. Then add the noodles and cauliflower, fold in and keep on warm until ready to serve. Top with diced green onion and more parmesan cheese.
Serve with hot dinner rolls or garlic bread.
Bonita’s Tips:
I like using Italian mild sweet sausages, but you use the type you enjoy eating.
Fresh garlic is lovely but powder garlic works well.
I like adding ginger for that warm hidden taste that I love.
Cheese type is your choice because of what you like eating.

Now our noodles and cauliflower is cooked and the sauce is made we are ready to marry them together. So you can do this when you are ready to serve it or toss together and keep warm on a low heat!!

You can see I have a few different veggies added to our sauce. “Like” frozen green peas, two types of onion, green and red, celery, red peppers. You can use the veggies you have available and like eating in this sauce. Hiding veggies so your kids get all the nutrition they need.
