Cream shortening and sugar together and if you don't have shortening replace with butter or margarine.

You can use one egg if eggs is not available where you live.

You can add the jam after you mix together the eggs or alternate the jam with the dry ingredient's and milk.

Ingredients
- Shortening - ½ cup
- White granulated sugar - ½ cup
- Eggs - 2 large
- Jam - 1 cup, of choice
- All - purpose flour - 2 cups, sifted
- Baking powder - 2 tsp
- Sea salt - ½ tsp
- Ground cinnamon - 1 tsp
- Ground ginger - ½ tsp
- Ground cloves - ½ tsp
- Nutmeg - ½ tsp
- Milk - ½ cup
- Walnuts - ½ cup, chopped
- Raisins - ¾ cup, plus 1 tbsp flour
Instructions
Method:
In a bowl, add shortening and sugar, cream together by hand with wooden spoon or mixer. Add egg one at a time beating between each one.
Stir in the jam ( of choice ). Add sifted dry ingredients and toss in the spices, alternating with the milk until all used and creamy. ( Keep one tablespoon of flour for tossing raisin in ).
Fold in chopped nuts ( of choice ), and raisins toss in a tablespoon of flour. Then fold into batter until completely covered.
Preheat oven to 350ºf and grease your bundt pan with butter or oil. You can use a pan of choice..
Scoop the batter into pan and bake for 50 to 60 minutes or until toothpick clean.
When baked remove from oven and cover with a towel and let rest for 5 minutes. Remove from pan and place on a cooling rack before adding icing or topping of choice.
Bonita’s Tips:
Use butter or margarine if you don’t have shortening.
If you use a spring release pan you may need to bake a little longer, check with a toothpick.
Sifting the flour helps separate the flour from being packed down and it helps lighten the flour.
Dusting the raisins with flour helps raisins from dropping to the bottom of the cake.
Icing with your favourite frosting or serve with thick cream and fresh fruit.
