One Pan Chicken Meal

I'm using chicken breast, boneless, skinless pieces.....you can use a chicken part of choice.


I'm using my Dads old cast iron pan,,,but if you don't own a cast iron pan use a baking pan or roaster.

Ingredients
- Chicken Breasts - 2 pieces, skinless, boneless
- Onion - 1 large sliced
- Potatoes - 2 unpeeled, washed
- Garlic clove - 2 diced
- Broccoli and cauliflower - 4 pieces,
- Pepper - 1 cut in chucks
- olive oil - 1 or 2 tbsp
- butter - 1 tbsp, melted
- Worcestershire sauce - 1 tbsp
- broth - 1 cup
- sea salt - pinch to taste
- black pepper - pinch to taste
- onion powder - pinch to taste
- shake and bake, or seasoned bread crumbs - 2 tbsp
Instructions
Method:
In a cast Iron pan or pan of choice, add peeled and chopped onions, peeled and chopped garlic, two unpeeled potatoes that as been wash under the water tap and cut in half.
Then pat dry two chicken breast or chicken of choice…..top with shake and bake or seasoned bread crumbs. Place on top of the onions with the shake and baked side up.
Then around the chicken add the chopped peppers, broccoli or cauliflower, drizzle with olive oil, place a piece of butter in the pan.
Then a pinch of sea salt, pepper, onion powder, Worcestershire or soya sauce and broth.
Preheat the oven to 400ºf
Cover the pan with a piece of foil wrap for half the cooking time of 30 to 40 minutes, then uncovered for another 30 minutes to brown off chicken and veggies.
When cooked remove from heat and serve with garlic toast to fresh rolls…Enjoy
Bonita’s Tips:
Use bone in or out for the choice of chicken, but skinless to lessen the fat in meal.
Use other veggies of choice or what you have available in your home.

Sometimes you are looking for a meal for supper and not sure what to make…I like making these one pan meals. Just change it up….use pork, turkey or a chicken part of choice.

You can use a different veggie, I’m using broccoli and cauliflower…small peppers cut in slices…you can also use bell peppers…

Not a lot to this meal but it is tasty!!
