Ingredients
- Chicken Breasts - 1 piece, pre person
- Pesto - 1 tbsp pre chicken beast
- sea salt - pinch
- black pepper - pinch
- onion powder - pinch
- Navel Orange - 3 slices pre person
- PASTRY:
- all-purpose flour - 2 cups
- COLD butter - ½ cup
- sea salt - ½ tsp
- COLD water - ½ cup, more if needed
- PICKLED RED ONIONS
- red onion - ¼ onion, diced
- rice vinegar - ¼ cup
- sugar - ½ tsp
- green onion - ¼ cup
- onion powder - pinch
- black pepper - pinch
- sea salt - pinch
- mason jar - to store
- PESTO
- fresh basil - 1 cup
- fresh parsley - 1 cup
- garlic cloves - 4 each
- almonds - ½ cup
- olive oil - 3/4 cup
- parmesan cheese - 3/4 cup
- sea salt - ½ tsp
- black pepper - ½ tsp
Instructions
Method for Chicken:
Take your chicken beast one pre-person, boneless and skinless and part dry with a paper towel, place on a chopping board. Season with sea salt, black pepper, and onion powder. Then add one tablespoon of pesto on each piece and rub over the top of the chicken beast pieces.
If you are using turkey beast and its big cut in half, long ways to make it the size as your hand. Then after your pastry is made and cut into 2 inch strips and five inch long. Take one piece and place side ways on the piece of beast, do this three or four times overlaying each piece a little. Just tuck in under a little not all around.. See video for more details.
Do this until all chicken beast are done based on the amount you like or need. (Keep the extra pastry to use another time.)
Method for Pastry:
Mix flour, butter ( chop in pieces) and salt together in a bowl mix with your hand or standup mixer. When mixed add water, mix until it shapes into a ball then remove from mixing bowl.
Sprinkle countertop with flour, then cut the ball into 2 pieces, put one pastry ball on counter then roll out the same as a pie pastry… With a pizza cutter, cut long strips around 2 inch wide and 5 inch long.
Continue doing this with half of the pastry dough , then preheat your oven to 375ºF and set the timer to 20 to 30 minutes. Bake Until the internal temp is 165ºf. and golden brown.
Method for PESTO:
Makes 1½ cups
Add first five ingredients to a food processor and blend until a paste like consistency.
Then with motor running add olive oil or cooking oil…thorough feed tube in a steady stream until used. Then add parmesan cheese, sea salt and pepper.
After put in a mason jar to use in a week or freeze in a ice cube tray to remove one at a time when needed.
Serving meal:
Peel and slice your oranges three slices pre-person or less, place on the bottom of a dinner plate. Peel and dice ¼ of a red onion, cut your 1 green onion in slices, 1 tsp parsley is optional. Then in a bowl add them all and drizzle with your favourite vinegar i’m using ¼ cup rice vinegar, also a pinch of onion powder, sea salt and pepper, ½ tsp sugar . Toss together! This is a quick pickling recipe…
Then remove the chicken from the oven and place on a dollop of pesto and the orange slices off to the side with a big scoop of pickled red onion. Then a helping of the veggie mixture on the side. Serve with a side of veggies..… Enjoy
Bonita’s Tips:
Freezing them in ice cube trays keeps them longer and can be removed and use when needed. Thaw one hour before used.

We are always looking for new ways to have a healthy and tasty meal…sometime it’s hard to do because of the affordability of groceries these days. When making a meal with chicken you can use what is more affordable for you and sometimes you can buy a full chicken and cut off the pieces for more options.

You can also make this meal with turkey fillets or pork tenderloin for the healthier choice.
