
Peanut Butter and Jelly Cookies

These cookies are made with a few simple ingredients and they have a dollop of jelly in the middle.

Cream together the peanut butter, butter, brown sugar and vanilla first.

Sift in the flour, baking soda and sea salt....then form into a dough ball.


These little cookies are so tasty and easy to make....if you like peanut butter you are going to love these peanut butter and jelly cookies. Keep them in a cookie jar after they come to room temp. They also freeze well if you make more then you need.

Ingredients
- Peanut butter - 1 cup
- Butter or margarine - ¼ cup
- Brown sugar - ½ cup
- All - purpose flour - 1 cup, sifted
- Baking soda - ½ tsp
- Sea salt - ½ tsp
- Evaporated Milk - ¼ cup, or milk of choice
- Vanilla - 1 tsp
- Egg - 1 large
- Jelly or jam - ¼ cup, of choice
Instructions
Method:
In a bowl add peanut butter, butter, brown sugar and vanilla extract. Mix until all combined.
Then add one egg in a small bowl to check before adding it to the mixture, then toss in the evaporated milk or milk of choice.
Sift together the flour, sea salt and baking soda into the mixture and fold together. Form into a dough ball.
After line a cookie sheet with a piece of parchment paper, take about one tablespoon of the mixture and form into a small ball.
Place on the cookie sheet and continue until all cookie balls are made.
After take your finger and poke an hole into the middle of the cookie and put just a little dollop of jelly or jam into it.
Continue doing this until they are all finished.
Preheat the oven to 350ºf and bake cookies for 15 minutes or until a light golden brown…Don’t over bake.
Remove from the oven and place on a cooling rack, serve hot or room temp.

Use smooth or crunchy peanut butter.
Use butter or margarine.
Use your favourite jelly or jam.
Store in a cookie jar or tuber ware container.
