Super Food Muffins

Hi and welcome to our website!
If you are looking for a healthy muffin choice!!!
This is it!!
I'm using a lot of super food ingredient's, like.....apples, carrots, bananas, cranberries and blueberries.
Plus whole wheat flour, oatmeal, brown sugar and orange juice.
So I hope I have you interested in making these muffins today...They a breakfast in a muffin!!


I'm using frozen cranberries and blueberries...but you can use fresh.

I'm using whole almonds for the top of our muffins before you bake them.


I hope your excited to make these healthy super food muffins today, after Christmas we are all looking for ways to eat healthier and less fuss!! You can make these muffins and freeze them to take one out at a time.

Ingredients
- Banana's - 3 medium, frozen or one week old.
- Apples - 2 grated or ½ cup apple sauce
- Eggs - 2 large
- Brown sugar - ½ cup
- Oil - ½ cup
- Vanilla - 2 tsp
- Orange Juice - ½ cup
- Whole Wheat all- purpose Flour - 2 cup
- Baking powder - 1 tsp
- Baking soda - 1 tsp
- Oatmeal - ½ cup
- Carrots - 2 grated
- Sea salt - ½ tsp
- Ground cinnamon - ½ tsp
- Ground nutmeg - ½ tsp
- Cranberries and Blueberries - 1 cup
- Almonds or walnuts - 24 each
Instructions
Preheat oven to 400°F
Prep time 10 minutes, Baking time: 400ºf for 20 to 25 minutes, depending on your oven
12 large and 24 small muffins.
Method:
- In a mixing bowl add, brown sugar, oil, banana’s mix together, then add grated carrots, grated apples or apple sauce, vanilla, continue mixing. Then fold in two eggs.
- Add all dry ingredients including the spices and fold into banana mixture, then add orange juice. Fold in your cranberries and blueberries to batter.
- Then scoop batter in greased muffin pan or place muffin sleeves. Top with a pinch of brown sugar or nuts of choice on the top of each muffin.
- Bake in a preheated 400ºF oven for 20 to 25 minutes or until golden brown, or toothpick clean.
BAKING TIPS:
- The older the banana’s are the sweeter they are and they are great for baking.
- Eggs love egg shells, so if your shell breaks remove the shell from the bowl with the other shell.
- This recipe can be a banana bread and add any extra ingredients like berries, raisins or nuts.
- Use ½ cup melted butter if you don’t have oil!!

Prepare the pans with spray oil or sleeves to keep them from sticking. I have 12 medium muffins and 24 small muffin from this batch. But remember to only full them half ways up the cup.
