We have something here for everyone...todays recipe is a tasty tater tot breakfast casserole....
This can be made for breakfasts, dinner or supper!

Tater tots is the main ingredient but can be replaced with large hash browns...

Before frying the sausage remove the casings and then fry with a pinch of pepper, sea salt and onion powder...Continue cooking until a golden brown and toss in the peppers to infuse the flavours of both.



This mild Italian sausage is so flavourful. But use the sausage you enjoy eating for your recipe..

Ingredients
- Tater tot's - 1 bag, or 800g or 4 cups
- Mild Italian sausage - 1 pound, remove casing
- Shredded mixed cheese - 1 cup or more
- Bell Pepper - 1 chopped, or mixed colours
- Eggs - 5 large, or more
- Butter or margarine - 1 or 2 tbsp
- Sea salt - pinch
- Black or White Pepper - pinch or more
- Onion powder - 1 tsp
- Milk - 1 cup
- Fennel seeds - ½ tsp
Instructions
Remove skin from sausage and put in a frying pan with butter on medium heat. Chopping the sausage in small pieces while frying with your wooden spoon.
Then add a pinch of sea salt and black pepper. Add onion powder more butter if needed. Before adding the fennel seeds grind the seeds to bring out those amazing flavours then add to frying pan.
Remove any oils coming from the sausage into a bowl to discard. Fry sausage until golden brown. Then add chopped bell peppers or peppers of choice. About one pepper would be enough or if you like more.
Let cook for a few minutes with sausage.
After you will need a casserole dish of choice, I’m using a 9 x 14 inch pan.
Oil the pan then add your taters and cooked sausage mixture, then toss together with two scoops.
After crack your eggs in a medium bowl with your milk, whisk together, add a pinch of sea salt and black pepper if you wish.
Toss over the taters and sausage mixture, then top with shredded cheese of choice.
Preheat oven to 350ºF and bake for 60 minutes or until egg is cooked.
When baked remove from heat and serve HOT with toast, baked beans and hot tea.
Bonita’s Tips:
Make only half the about if you are only making it for two people.
You can also use large cooked hash browns to replace tater tots if you wish.
Make in a smaller casserole dish if making it for less.

This recipe today was one my son’s mother in law made for us over Easter for brunch and I must say it was lovely. I’m didn’t get her recipe but just tasting it gave me the idea to share it with you using ingredient’s you have in your home. Please continue on to more info and food pictures to make yours today..
