I can just eat this icing on it's own....So good!!!

She is a natural baker and just loves spending time with us both. Use your standup mixer or spoon....Cream together the butter and sugar first and add vanilla and two beaten eggs. Then coffee, and half cup cold water to help bring it together.


After toss in your semi-sweetened chocolate chips or chucks into the batter.

Ingredients
- All-Purpose Flour - 2 cups, sifted
- Brown sugar - 1 cup
- Sea salt - ½ tsp
- Instant Coffee or Brewed - ¼ cup fresh, or 1 tsp instead with ¼ cup warm water
- Vanilla - 1 tsp
- Eggs - 2 large
- Evaporated Milk - 1 cup, plus ½ cup water
- Unsalted butter - ½ cup
- Cinnamon - ½ tsp
- Nutmeg - ½ tsp
- Cocoa powder - 4 tbsp
- Semi-sweetened Chocolate chips - ½ cup
- Baking powder - 2 tsp
Instructions
Method:
Preheat 350ºF and bake for 30 to 45 min, or toothpick clean.
- Cream butter, sugar and vanilla together in a large bowl, mix eggs together a small bowl first then add milk and water. Whisk together lightly.
- Add freshly brewed coffee room temp or mix together coffee to warm water, add to bowl with wet ingredients.
- After sift together all the dry ingredients to the bowl, mix until combined.
- Grease a slab pan 8 x 11 also called quarter pan, or line with parchment paper.
- Then fold in chocolate chips to mixture, until combined. Add to pan.
- Bake in a preheated 350ºF oven for 30 to 45 minutes or until batter comes out clean. ( depending on your oven) When baked let rest for 10 minutes then release unto a cooling rack. Also you can leave in pan to icing and serve.
Custard Cream Icing
ingredient’s
3/4 cup unsalted butter 3 ½ to 4 cups confectionary sugar
3 tbsp custard powder 4 or 5 tbsp milk, add gradually
1 tsp vanilla ½ tsp sea salt
In a bowl add unsalted room temperature butter, mix a little.
Add one cup of confectionary sugar at a time, but sift it in first to take any lumps out of the sugar.
Add the custard powder and sea salt, continue mixing together.
Top with milk and vanilla then the last cups of sifted confectionary sugar.
Fold together until smooth.
Use a wooden spoon or spatula or mixer to mix it together.
Bonita’s Tips:
Use fresh milk for cake if you don’t have access to evaporated milk. Also use freshly brewed coffee if you don’t have instead.
Use two round pans if you wish to have a round cake.

You can see the chocolate chips melted in the cake, I turned it over because the top was cracked but it still is fine to icing it cracked you can’t see that.
But we had a little dance class in the kitchen while we waited for the cake to be done and forgot the cake was in the oven. 🙂
But to prevent the cake from cracking put a cookie sheet under the pan with water in it the stream will help the cake from drying out and cracking.

Make the icing just before you are going to use it on the cake.
This will help the icing from setting to hard before spread over the cake. If this happens just add more evaporated milk and blend it again with the mixer…


Using a piping bag and top, decorate the top of the cake or write something on the top for a special occasion. Like ” Happy Birthday or Happy Anniversary!
