Ingredients
- Potatoes - 6 large or 1 per person
- Hard boiled egg - 2 peeled and cut in cubes
- Red onion - 2 tbsp, diced
- Green onion - 1 or 2 sticks, chopped
- Baby tomatoes - 10 each, cut in half
- English cucumber - ½ cut in cubes
- Black or White Pepper - ¼ tsp or more
- Sea salt - ½ tsp, add to water with potatoes
- Dijon mustard - 1 tbsp, or mustard of choice
- Mayo or miracle whip - ¼ cup
- Onion powder - ¼ tsp
- Paprika - Pinch for topping
Instructions
Peel potatoes and cut in chunks, add to a saucepan of water with half teaspoon of sea salt. Cook only until fork tender. Drain water off and add potatoes to a bowl.
Using the same saucepan with fresh water, add eggs and cook until hard boiled.
Remove from water and peel them and cut in cubes.
Peel and chop the red onions, diced green onion, cube the english cucumber and baby tomatoes cut in half. Toss into the same bowl with your potatoes.
Add black pepper, onion powder, dijon mustard or mustard of choice and the mayo.
Using two spoons toss all the ingredients together, add more ingredients or seasonings to taste or for the amount of people you are making it for.
Sprinkle a pinch of paprika over the top just for garnish.
Bonita’s Tips:
One potato per person, double everything else if you like to make a bigger salad. This salad serves six people.
Using your favourite mustard is always nice, miracle whip if you don’t like mayo.
Keep in fridge after made and it’s good for a few days. Make the day before serving to kick up the flavour.
