Ingredients
- DOUGH INGREDIENTS.
- All - purpose flour - 1¼ cups
- Traditional or fast rising yeast - ½ tsp
- Sea salt - ½ tsp
- Sugar - 1 tsp, for yeast
- Warm water - ½ cup
- Butter or margarine - 1 tsp, melted
Instructions
Method:
In a bowl add ½ cup warm water, sugar and yeast let rest for about 5 minutes. In another bowl add 1 cup of flour, sea salt, and melted butter, toss together.
After yeast have risen add to flour mixture and start mixing together, when it becomes sticky toss a few sprinkles of flour from the ¼ cup to blend together.
Kneading the dough to make a ball, cover and let rest in warm place for 20 to 30 minutes. After dough is ready, you will need a pizza pan.
STREUSEL ingredients:
In a small bowl:
¾ cup lightly packed brown sugar ½ cup flour
1 tsp cinnamon ¼ cup butter or margarine, melted
STREUSEL method:
Mix first 3 ingredients together. Then blend in melted butter or margarine until crumbly.
Rhubarb and Strawberry Jam Ingredients:
2 Cups rhubarb cubed
1 Cups strawberries
½ Cups sugar, also use a sugar of choice
1 tsp freshly squeezed lemon and zest
¼ cup water
Prep time 10 minutes, cooking time 20 to 30 minutes.
Jam Method:
In a large saucepan combine all ingredients, start the boil on a medium heat, cook for around 10 to 15 minutes then reduce heat to low.
Continue cooking on a low heat for another 15 minutes stirring occasionally so jam doesn't burn, while waiting for jam to cook. Continue working on the other ingredients. When jam is cooked or at the consistency you need. ( LET COME TO ROOM TEMP )
You may have jam left over so have a mason jars ready to scoop the jam into. Keep in fridge until all eaten.
First: Add dough to a greased pizza pan and spread out, top with rhubarb and strawberry jam, or jam of choice. Then top with your streusel mixture. Preheat your over to 350ºF and bake for 30 to 35 minutes, or until golden brown. Top with melted cheese cheese icing or with a whipped cream or ice-cream. ( serve hot or cold )
