Steamed Salmon Pudding

You can use canned salmon or a fresh fillet.

Peel and cook the potatoes until fork tender, leave the water to cook the salmon for five minutes when you remove the potatoes.
Unless you are using canned salmon.
Still keep about quarter of a cup of the starch water for the cheese sauce.

Mash or rice the potatoes and add the following ingredients....butter, salt. pepper and onion powder.

Ingredients
- Potatoes - 6 or 8 large
- Salmon - 1 - 213g can or fresh fillet
- Butter or margarine - 1 tbsp
- Cream or milk - ½ cup
- Egg - 1 large
- Sea salt - 1 tsp
- Pepper - ½ tsp
- Onion powder - ½ tsp
Instructions
Method:
In a saucepan with water a ½ tsp sea salt add peeled potatoes and cook until fork tender.
Then after cooked, remove potatoes leave the water for cooking your salmon for 5 minutes.. Then rice the potatoes or lightly mash into a bowl. Also you can use tin salmon just drain the liquid and check for bones. Shred the salmon and add with the potatoes. ( always remove bones before adding to bowl )
Then in a small bowl crack one egg and lightly beat. Add to potato bowl, with butter, pepper, onion powder and the other ½ tsp of sea salt.
Mix all ingredients together well and scoop into a greased mold/pudding tin and press the ingredients down. Put lid on mold or pudding tin.
You will need a boiler quarter full of water on a medium heat. Cook salmon pudding for one hour or until cooked. Knife clean!!
When cooked serve very hot with a cheese sauce or mushroom sauce. Plus a hot cup of tea and fresh bread or rolls.
CHEESE SAUCE:
Recipe:
1 cup shredded cheese 2 tbsp flour
1 cup milk 2 tbsp butter
pinch pepper pinch sea salt
pinch onion powder
Method:
In a hot pan add butter, let melt then add flour and stir into a paste. Then slowly add milk and the seasonings. Then keep mixing in the shredded cheese of choice…more if needed until thick. Add more milk if to thick. Keep warm until salmon pudding is cooked.
Bonita’s Tips:
Use half milk and half water for sauce too…
Buy salmon pieces it is cheaper, ask the butcher.

We have many traditional pudding available here on our website, anything from sugar to savoury ones. This one is made with freshly cooked or canned salmon.
Whatever you have available.
Serve it with a homemade gravy to a creamy cheese sauce it’s all up to you.

This same mixture is good for fried salmon cakes too!!

Scoop the mixture into the pudding tin and put into a boiler of hot water to cook on the stovetop for one hour.


Make a tasty cheese sauce…


Supper is ready!!!

Serve with mixed veggies, fresh bread rolls and a hot cup of tea!!
