This is it!!!
You are going to love the taste and the use of leftover ingredients..

How easy is that, your family will say what's for supper Mom and you will be giving them a meal that cost only a few dollars.

One can of coconut milk...I got mine for $1.40 this is the cream of this soup.

Look at those grated carrots...so tasty.

Chop the spinach lightly and put in the soup when ready to serve...

After the broth is in the boiler, top with the veggies....carrot, celery, chopped onion, potatoes and seasonings.
Let the boiler of soup start to cook and when the liquid is start to boil cook it for 15 to 20 minutes before adding in the chicken and coconut milk.

Not much to this soup but very tasty.

Use your own judgement for the seasonings, you may like more or less.

Ingredients
- Coconut milk - 1 can
- Chicken - 1 or 2 cups of cooked chopped
- Green cabbage - 2 cups shredded
- Carrot - 2 large shredded
- Potato - 2 each, diced or chopped
- Onion - 1 large diced
- Celery - 1 stick, diced
- Spaghetti - 2 cups or more, cooked
- Spinach - 2 cups or more, fresh
- Black or white pepper - ½ tsp or more
- Sea salt - 1 tsp
- Onion powder - 1 tsp
- Thyme - 1 or 2 tsp, fresh or dried
- Savoury - ½ tsp
- Garlic - 1 or 2 cloves
- Veggie or chicken broth - 6 cups or more
Instructions
Method:
This recipe is for 4 to 6 people, first chop your cooked chicken in bite size pieces. Shred half of a green cabbage or two cup. Peel and shred carrots, dice celery and peel and dice or chop potatoes….…pretty much get everything ready. A light chopping of the fresh spinach.
Peel and dice one large onion, use leftover spaghetti or cook about enough for two cups.
In a large saucepan or boiler, add veggie broth, diced onion, diced celery, shredded carrot, shredded cabbage and potatoes.
Let boil for 15 to 20 minutes to cook the veggies a little. Add the seasonings and use some of your choice. Then add the cooked chicken and one can of coconut milk. Stir and let simmer for 10 minutes.
Don’t let coconut milk boil or it may curdle.
Then when ready to serve soup, add a helping of spaghetti in each bowl, a nice helping of fresh spinach, then a big scoop of the coconut veggie broth in each bowl. Top with some more fresh herbs like thyme,savoury or basil or a herb of choice.
Serve with a slice of toasted bread or bread roll.
Bonita’s Tips:
This is a leftover meal, like chicken and spaghetti.
Use fresh spinach, herbs and use your leftover veggie broth from your cooked dinner.
Use whatever noodle you wish.
Keep the coconut veggie broth in large mason jars and reheat for a soup all week.
Allergens

Layering the spaghetti and baby spinach in a bowl before adding the soup and extra thyme….

After the soups veggies got about 20 minutes cooking they are soft and tender…..
Add the chicken and one can of coconut milk….you may need to mix the coconut milk a little before pouring it into the boiler.
Lower the heat to low and simmer.

Keep the soup on simmer and stir every so often.
You don’t want the milk to curdle.

After you add the cooked spaghetti and spinach to the bowl top with the soup..and a few pieces of thyme.
