During a visit to Saint Pierre and Miquelon we visited a little Café that sold amazing vanilla filled pastries and more.

Making a delicious homemade vanilla pudding using the simples of ingredients....


This is a recipe our son Brad makes for his family and this is a link to a video making them....

This video is for seafood crepes but the crepes is the same for any recipe you want them for...
So our recipe today is my little spin on our visit to Saint Pierre and Miquelon and remembering the little taste of those delicious french crepes and pastries.

Ingredients
- CREPES:
- All - purpose flour - 1½ cups
- Eggs - 3 large
- Milk - ¾ cup, fresh or evaporated
- Water - ½ cup
- Butter or margarine - 3 tbsp, melted
- Vanilla Pudding:
- Sugar - ½ cup
- Corn Starch - 2 tbsp
- all purpose flour - 1 tbsp
- Nutmeg - ¼ tsp
- Sea salt - ¼ tsp or less
- Milk - 2 cups
- Egg yolks - 2 each
- Vanilla - 1 tsp, or vanilla beans
- Chocolate Topping:
- Chocolate chips or chucks - 100 grams
- Coconut Oil - 1 tbsp
Instructions
Crepe Cake
Recipe for Crepes
12 crepes
1½ cups all purpose flour 3 large eggs 3/4 cup fresh or evaporated milk
½ cup water 3 tbsp butter or margarine ½ tsp sea salt
1 tsp cooking oil for frying crepes - or non - stick pan.
Method for Crepes:
In a bowl add large eggs and whisk together, add in water, milk and flour; whisking until combined. Continue to stir together until smooth.
Add room temperature melted butter or margarine and sea salt; continue mixing until smooth.
In a medium frying pan or pan of choice on a medium to high heat, add just a drop of cooking oil or spray oil. ( Or non-stick pan with no oil )
Then pour about ¼ cup of crepe batter in hot pan, tilting the pan and rolling the batter in a circular motion to coat all around pan.
Start cooking crepes until it starts to brown and the batter on top is no longer wet, about 30 seconds to 1 minutes or more if needed.
Take a spatula and run around the edge of the crepe to left it a little, when it looks like it’s ready. Flip crepe over with big spatula or flip it over by tossing in the air.
Fry about another 30 seconds to a minute on the other side using more oil if needed.
Then flip out on plate, putting a piece of paper towel between each one and continue making all the crepes.
Vanilla Pudding:
Ingredients:
½ cup sugar 2 tbsp corn starch 1 tbsp all purpose flour
¼ tsp Nutmeg Pinch sea salt
Method:
In a bowl toss together dry ingredients with a fork or hand held whisk.
Ingredients:
2 cups milk 2 egg yolks
Method:
In a medium saucepan, add milk and put on a medium heat on the stove top to heat up “not boil”. Then add slowly all the dry ingredients to the milk and continue whisking until it starts to cook and gradually thicken. ( about 5 to 10 minutes ).Then in a small bowl add your egg yolks and whisk together until blended. Adding a scoop of the hot liquid to the eggs and mix quickly so it don’t cook.
Then quickly add the eggs to the warmed milk whisking continues until compliantly combined into the milk. ( We don’t want scrabbled eggs )
Extra Ingredients:
1 tsp vanilla extract, vanilla beans or paste
Method:
When milk mixture is smooth and thicken, remove from heat and add vanilla, continue whisking to blend it in. After pour hot mixture into a bowl and place a piece of clear wrap over the top touching the pudding so no air is in it. ( see video for more details )
Put in the fridge and let cool and set for a couple of hours or overnight.
Melted Chocolate:
100gm chocolate of choice 1 tbsp coconut oil
Melt in the microwave for one minute, then add coconut oil and whisk together.
Making Crepe Cake:
Add one crepe to a plate and top with vanilla pudding. Then top with another crepe and repeat the method until all crepes and vanilla is used.
Then top with melted chocolate until covered. Put in the fridge until sat and ready to serve. Keep refrigerated until all eaten. Serve with fresh or frozen berries and whipped cream.
Allergens

If you ever get to visit Newfoundland and Labrador….
Include St. Pierre and Miquelon on your visit.
You will need your passport to cross on the ferry from Fortune to St.Pierre but you will love it..
This recipe today is my memory of eating at the local Café and sampling the fine pastries and crepes….


Crepes, vanilla pudding and after you layer them with pudding between each one the last step in the pouring of the melted chocolate.
The chocolate could be chocolate chips, bar, chocolate easter bunny or santa…
It will all work.

I’m all about saving money and making recipes on a budget.
Sometimes we do have to spend a little more for something we really like to have or make….
