Mallow Sweet Potato Pie

This recipe is a homemade Mallow Sweet Potato Pie, a recipe my dear friend gave me back in 2018!

Sweet potato is the main ingredient.

Peel and cut sweet potato into cubes and place into a saucepan of hot water with a half teaspoon of sea salt. Cook until fork tender, remove and drain water off and mash.




Preheat the oven to 350ºf and bake the pie crust for 15 to 20 minutes before adding the sweet potato mixture.

Ingredients
- Sweet potatoes - 1 large cooked
- Buttermilk, sour milk or plain yogurt - 1 cup
- Brown sugar - 1/3 cup
- Eggs - 2 large, beaten
- Maple syrup - ¼ cup
- Mini marshmallows - 1 cup
- Fresh or ground ginger - ½ tsp
- Ground cinnamon - ½ tsp
- Allspice - ¼ tsp
- Nutmeg - ¼ tsp
- Sea salt - 1/8 tsp, for filling also 1/2 tsp for cooking sweet potatoes
- Pecans - ½ cup
- Topping
- Maple syrup - 2 tbsp
- Brown sugar - 2 tbsp
- Butter or margarine - 2 tbsp
- Butter milk - 1 tbsp or milk of choice
Instructions
Method:
Preheat oven to 350ºF
One single pie crust, see recipe below! Bake pie crust first for 15 minutes, remove and let cool.
Cook sweet potato in hot water with a pinch of salt until fork tender, remove for heat and mash. Let cool before adding the other ingredients.
Next, In a bowl add room temp sweet potatoes, sugar, ¼ cup maple syrup, ginger, ground cinnamon, nutmeg, allspice and sea salt. Add eggs beat lightly with a fork until all ingredients are combined. Gradually stir in buttermilk until thoroughly combined.
Place baked pastry shell on a baking sheet so it don’t drip in oven. (optional)
Pour filling into pastry shell and bake for 30 minutes.
Meanwhile in a small saucepan melt butter over a medium heat. Gradually add in 2 tbsp brown sugar, 2 tbsp maple syrup, and 1 tbsp milk stir and cook until mixture comes to boiling stage.
After 30 minutes baking, with pie on the oven rack, carefully pull out the rack and sprinkle partially baked pie with pecans and marshmallows. Then scoop the syrup over the top, evenly.
Bake for another 15 to 20 minutes more or until centre appears set when shaken. Cool on a wire rack at least 1 hour. Cover and chill within 2 hours. Store in the refrigerator up to 2 to 3 days. Freeze if not eaten.
Bonita’s Tips:
Sour milk method is to put 1 tbsp of white vinegar into the cup of milk and stir. Or use buttermilk.
Put fork pokes into the pie crust before baking it to stop from rising up in the middle…
