If you are looking for a delicious recipe for homemade chicken soup, well look no further. I have a video available to follow as well with step by step tutorial. This is a left over chicken soup recipe you can make quick and easy with tons of flavour. So set back and enjoy a few pictures and my video for homemade chicken soup.

I hope I've convinced you to make this soup, anytime of the year soup is good. But when flu season starts I can't tell you enough about why you should make soup and drink lots and often.

Make chicken soup from raw chicken or from already roasted chicken, any way you make it, its so easy. Follow my video or just read the recipe and enjoy to the fullest.......

Ingredients

Chicken - cooked Leftovers or raw ( any amount )
Carrots - 2 copped
Turnip - 1/2 chopped
Potatoes - 2 chopped
Onion - 1 medium chopped
Celery - 3 sticks chopped
Garlic - 1 or 2 cloves chopped
Sea salt - 1 tsp or chicken oxo cubes
Pepper - 1 tsp
Thyme - 1/2 tsp more ground or fresh
Oregano - 1/2 tsp fresh, ground, or dried
Parsnip - 1 chopped
Chicken Broth or Stock - 6 to 8 cup or ( water )
Noodle or Rice - of choice

Instructions

1. In a large bowl with cold water, add all peeled and chopped veggies.

2. Start the boiling on your chicken broth or water.

3. Add leftover chicken but chop in small pieces and debone before adding the broth.

4. If chicken is raw, start to cook first in a boiler with 4 cups of water and one large onion cut in quarters with 1 tsp sea salt.

5. When chicken have cooked for 20 minutes, add all veggies and seasonings, garlic.

6. Continue boiling for another 10 minutes then add your choice of rice or noodle or leave it out, continue cooking for another 15 minutes.

7. Taste to see if you need to add anymore seasonings, if so you add more of the same.

8. When cooked serve with fresh bread or rolls, top with more thyme and pepper to taste.

Very delicious, versatile recipe. I have picky eaters and it was extremely easy to adapt this recipe to include/exclude certain vegetables. I use minced garlic instead of chopping up the cloves, and I put the onion in whole, as my boyfriend likes the taste of onion, but not the texture. I cut up the celery in larger pieces so the flavour is there, but they can be easily picked out.
I don’t know if the family is excited that I’m cooking a roast chicken supper, or excited because I’m making this soup the next day.

I love roasting a chicken and then making leftover chicken soup, keeping them in mason jars in the fridge to have when we like to have them.
