Maple Bacon Jam

If you are wondering what MAPLE BACON JAM is your in the right place!
This is a sweet and savoury jam mostly used for a side to use in a burger, sandwich or Charcuterie board.
But you can put it over your morning toast.


Start to fry in a large frying pan because after you crisp up the bacon you need to cook the onion in with it.....Plus leave the fat from the bacon in the pan or take half of it off.


You can take some of the oil off the bacon but you will need this to fry the onions in the bacon fat to make that flavour of bacon....

Add in the onions and cook for a few minutes to caramelize them, then add in the other ingredients.

Ingredients
- Bacon - 1- 360g pack, regular or thick
- Yellow onion - 4 large onions of choice
- Brown sugar - ½ cup
- Apple cider vinegar - ¼ cup
- Black or White Pepper - ½ tsp
- Onion powder - 1 tsp
- Balsamic Vinegar - 2 tbsp
- Maple syrup - ¼ cup
- Butter - 2 tbsp
- Garlic cloves - 3 each
Instructions
Slow cooker on low for 2 hours, oven cooked on 275ºf for 2 hours.
Method:
Peel onions and chop in small chucks, cut bacon in small pieces. Start cooking the bacon in a frying pan with butter on a medium heat. Fry until bacon starts to brown off.
Then add onions, pepper and onion powder, stir continuously until the onions start to caramelize. “Keep the oil from the bacon for cooking onions and making the jam.” or take some off if you wish.
You will see the pan getting all of those brown charred marks and that means flavour.
Add balsamic vinegar and brown sugar and fold in. Top with chopped garlic and maple syrup to deglaze the pan. Getting all of those brown spots on the pan….
Then you can put all of the fried onions and bacon mixture in a slow cooker or oven save pan with lid. Slow cook for two hours before removing it from the pan and adding the mixture to small prepared mason jars.

This is for short term fridge storage only but you can seal them before. Date and label jars best up to 3 weeks.

Use you favourite onions and bacon to make this recipe, only use smoky bacon if that’s the kind you like.
Use extra balsamic vinegar if you don’t like maple syrup, up to 1/4 cup.
