Pumpkin Spiced Bread

If you are looking to make a delicious homemade loaf or round Pumpkin Spiced Bread.
Our recipe is a few simple ingredients and not a lot of work.
So make yourself a cup of tea and sit back and enjoy our bread recipe.

Pumpkin seeds and sunflower seeds go so well with this recipe...
You can add different seeds if you wish or grind them up before adding it to the flour.

You can use a pumpkin spice if you don't have access to all of these spices. But you will need at less two tablespoonfuls of it.

You could use melted butter of soft butter to mix through the flour first before adding the other ingredients.

I've been making my bread with the mixer for the last few years.
The reason being my hands is just not the same...:)
So it was time for a little help in my kitchen and it's ok to get help.

Dough texture should be wet and sticky when at the mixing stage, the only time you can add water. After you made those changes toss in small amounts of flour to bring the dough together and it's a nice soft texture.



After you cut the strings out tie it at the top and place on the counter top to place the dough ball on.

Ingredients
- All - purpose flour - 3.5 cups
- Brown sugar - 1 tbsp
- Traditional or fast rising dry yeast - 1 tsp
- Melted Butter or margarine - 2 tbsp, plus extra for your pan and bread
- Sea salt - ½ tsp
- Warm water - 1¼ cups, more if needed
- Pumpkin seeds or sunflower seeds - 1 cup
- Ground allspice - ½ tsp
- Ground ginger - 1 tsp
- Ground cinnamon - 1 tsp or more
- Ground cloves - 1 tsp
- Ground nutmeg - ¼ tsp
- Cinnamon stick - 1 each
- Cotton strings - 4 to 6 - 2ft pieces, or smaller
Instructions
Prep time: 10 minutes, Mixing time: 10 minutes, Rising time: 30 minutes, Baking time 30 to 35 minutes, baked time: 375ºf, dutch oven pot or pan of choice.
Method:
Combine in a large bowl: 3 cups flour, sea salt, toss together. ( Leave ½ cup of flour to mix dough together if needed )
In another bowl, add dry fast rising yeast with 1½ cups warm water and 1 tsp brown sugar.
Let rise for about 5 minutes.
In another small bowl melt two tablespoons of butter. Extra for your hands!
Then add flour, sea salt, spices and half of the pumpkin seeds to a big bowl and toss together, then make a hole in the middle to pour your proof yeast mixture and butter, mixing all ingredients together with a wooden spoon or mixer with hook until it thickens. Then keep adding ½ cup of flour to work dough together, plus add more warm water if needed ..ONLY ... ( If you need to add more warm water this should be done during the mixing stage.) This can be done with your hand or mixer with a hook.
Knead dough, add more flour if necessary until dough is smooth, elastic and just a little sticky and you can hear cracking of the dough when folding dough.. Keep folding dough into a ball.
When completed. Cover with towel and let rise for 30 minutes. After risen knead again into a ball. Then take the dough out and roll into the remanding of the pumpkin seeds. Then take the cotton strings that is cut into 2 feet strips or smaller, tie together and place on the counter. Put the dough ball on top and bring the strings up and over the ball of dough and doing that with each string until you have 4 to 6 bumps. Tie the top together..see video for more details. Preheat oven to 375ºF,. Put the dutch oven pan in the oven to preheat as well. When ready to bake. Then put dough into a prepared HOT dutch oven pan or a pan of choice, oiling the pan with butter. Cover the dough with the cover of the dutch oven and bake for 15 minutes . Then remove cover and bake uncovered for the other 15 to 20 minutes to brown off. (If you are using a regular pan, bake at a 350ºf uncovered for 30 to 35 minutes. ) or until bread is 190ºf on your internal thermometer,
When baked! Take bread out of the pan and place it out on a cooling rack. Drizzle some melted butter over the top. Cover with a towel for five minutes. Remove towel and cut the strings off the bread. Take the cinnamon stick and break in half and poke in the middle of the bread. To make it look like a pumpkin….Enjoy
Bonita’s Tips:
Putting bread on a cooling rack prevents bread from getting moist on the bottom.
Serve HOT or Cold!
When at room temp put bread in a plastic bag to keep bread soft and fresh for up to 5 days.
Use crushed or whole pumpkin seeds or seeds of choice in season.
Use more spices if you like.
