Salmon Potato Bites

This is a quick and easy starter or main course meal.

Next do the same for your fresh salmon fillets, one or two small fillets or one can of salmon. In a saucepan of water with 1/2 tsp sea salt part cook salmon for 5 minutes.
Remove from water and flake apart...remove all bone and grey skin.



Flake the cooked salmon and remove any and all bones from fillet.

You can use canned salmon for this recipe.

Ingredients
- Salmon - 1 cup or can, cooked
- Mashed potato - 2 cups or more
- Egg - 1 large
- Butter or margarine - 1 tbsp for potatoes
- Sea salt - ½ tsp, for potatoes and salmon while cooking
- Black pepper - ½ tsp
- Onion powder - ½ tsp
- Corn starch - ½ tsp
- Flour - 1 tbsp
- Dill - ¼ tsp
- Lemon wedges - 1 lemon
- Seafood sauce - Dipping sauce
Instructions
Deep Fryer and Cooking Oil
Method:
First in a saucepan with water and a pinch of sea salt, cook salmon for 5 minutes on a medium heat, remove from the saucepan and flake apart salmon in a plate, about 2 cups or one can.
Peel potatoes and rinse in cold water, then put in a saucepan with water, a pinch of sea salt, boil until fork tender. When cooked, drain water off potatoes and mash with butter, onion powder, dill and pepper.
After add flaked salmon, mix together with fork or masher until creamy but not wet, when mixture cools to room temperature, add beaten egg, flour and corn starch and continue creaming together. If the mixture is soft, put it in the fridge to cool down before using.
After shaping into small balls on a tablespoon until all codfish potato mixture is used, turn the deep fryer on and heat to 350ºF to 400ºF when ready. Put four to five tablespoonfuls of salmon mixture in at one time and fry until golden brown. Continue doing this until all fried and drain salmon bites on a paper towel to remove extra oil.
Serve with cocktail sauce and wedges of lemon.
Bonita’s Tips:
Peel and soak potatoes in cold water will remove some starch before cooking.
Making sure all bones are removed from the salmon before adding to mixture, pinching the cooked salmon with you two finger to remove bones.
Keeping deep fried salmon bites in the oven on 200ºf uncovered until ready with eat.
Use canned salmon if you wish instead of fresh salmon.

But we too can enjoy it buy watching for sales and using frozen or canned salmon.



Make sure the salmon potato mixture is room temp or cold from the fridge to fry easier.
