Seasoned Baked White Fish

Ingredients
- White fish - 1 fillet per person
- Lemon pepper - 1 tsp
- Onion Powder - 1 tsp
- Fresh Thyme or ground - ½ tsp
- Black pepper - Pinch
- Uncooked Rice - 1 cup
- Orange juice - 1 cup
- Water or Broth - 1 cup
- Green onion - 1 stick
- Lemon wedges - 4 wedges and juice
Instructions
Method:
Use fresh or frozen white fish of choice, thaw fish. season both sides with, lemon pepper, onion powder, black pepper and thyme.
In a cast iron pan or baking dish add uncooked rice and ½ tsp sea salt , 1 tbsp butter, one cup water and one cup orange juice stir lightly.
Top with seasoned fillets of white fish, add two wedges of lemon and juice on fish, then cover with foil or lid.
Preheat oven to 400ºF and cook for 20 minutes or until internal temp of fish is 145ºF. when cooked remove from oven and put fish on a plate and toss rice then add, diced green onion.
“Serve with a scoop of onion paste on the plate and top with baked white fish, a wedge of lemon, and a scoop of rice. Bread bun and a cup of hot tea. “
Onion Paste:
Recipe:
2 onion, peeled and chopped ½ tsp sea salt
½ tsp black pepper ½ tsp onion powder
1 tbsp butter 1 tsp olive oil
¼ cup melted butter
Method:
Fry chopped onions in a pan with butter and oil, season with sea salt, pepper and onion powder until soft.
After add to a blender with melted butter and blend until chopped and a little smooth.
Bonita’s Tips:
Boneless and skinless fish, one pre person or more.
Make onion mixture in advance serve hot or cold.
Bake fish separate if you wish.

Over the past few weeks, I’ve been getting messages asking what to do with frozen fish…
When planning a meal prepare by removing the frozen from the freezer in the morning to thaw.
You can cook things from frozen.

This white fish was frozen and I thawed it in the fridge.
Always safer to thaw your frozen’s in the fridge so it don’t go bad.

Season both sides before adding it to the pan.

This is a healthy and easy recipe to prepare and serve with your favourite veggies.

Bake in a 400ºf oven for 20 minutes or until the fish is 145ºf internal temp.

You can serve this on it’s own make yourself a tasty wrap…..anyway you serve it you will love it!!
Using orange juice and lemon takes this meal into another level!!
