Ingredients
- All- purpose flour - 2 cups
- Baking powder - 1 tsp
- Baking soda - 1 tsp
- Sea salt - ½ tsp
- Ground cinnamon - 1 tsp
- Allspice - ½ tsp
- Nutmeg - ½ tsp
- Sugar - ½ cup
- Shortening - ½ cup
- Egg - 1 large
- Apple sauce - 1½ cup
- Raisins - ½ to 1 cup (optional)
- Apple Sauce Boiled Icing:
- Milk - 1 cup, fresh or evaporated
- Flour - 4 tbsp
- Sugar - 1 cup
- Butter or margarine - ½ cup
- Vanilla - 1 tsp
- Apple sauce - ¼ cup or more
Instructions
Method for cake:
Measure all ingredients and preheat oven to 350ºF. Grease 8 inch pan of choice.
In a large bowl add shortening and sugar, cream together and fold in one egg. After add all dry ingredients to your sifter, alternate dry ingredients and applesauce.
Starting with dry and then applesauce, folding all ingredients together until all ingredients have been added.
Then fold in raisins, but these are optional if you wish to not add them.
Scoop all batter into your 8 inch pan of choice and place in the preheated oven and bake for 45 to 60 minutes, depending on your oven. Let cool and icing!
METHOD for icing:
- In a medium saucepan add milk, sugar and flour, start to boil on a medium heat stirring continuously.
- After liquid starts to boil slowly and thicken, this can take around 5 minutes, remove from heat and stir in vanilla to mixture.
- Put all sugar paste mixture into a bowl or jar and bring to room temperature, then put in the fridge to cool. This can take 1 hour or more for the sugar paste to cool totally.
- In a medium mixing bowl with a blender, add butter and slowly scoop the sugar paste mixture into the bowl with your butter and blend on high speed, then add applesauce until all combined and light and fluffy.
- Continue mixing until combined and put the bowl of boiled icing in the fridge until ready to use it.
