Not a lot of steps to this recipe and the results are amazing...cook the bacon first and take the oil off and pour into a bowl or mason jar to harden. Put in the fridge to harden quicker and keep there for a month or more...

Now you can use a stand up mixer or a wooden spoon to make these bacon scones...use what you have.

Sift the flour first and add to the mixing bowl, then add sugar, baking soda and powder. Toss together before adding the COLD Butter and bacon fat!!

Ingredients
- Bacon bits - ¼ cup
- Butter or margarine - ½ cup
- Bacon fat - ¼ cup
- Sugar - 2 tbsp
- Egg - 1 large
- Evaporated Milk - ½ cup
- All - purpose flour - 2 cups
- Baking soda - ¼ tsp
- Baking powder - 3 tsp
Instructions
Method:
- In a large bowl sift in all dry ingredients and toss together, add cold bacon fat and butter. Start to work your Bacon fat and butter into the dry ingredients with your hand or stand up mixer. Just until crumbled.
- Add ½ cup of evaporated milk and egg in a bowl and mix together, then pour it over the dry ingredients. Toss in bacon bit.
- Work together with your hand or stand up mixer until mixture starts to form a ball, don’t over work it. Sprinkle flour over counter top or wooden board, then roll out or press by hand. Roll to ½ inch thick, shape to a square to cut the wedges easy. See video for more details.
- After cut into 20 small wedges, smaller if you wish, place on a cookies sheet with parchment paper. Brush with a egg wash or butter to give it a nice golden brown.
- Preheat your oven to 350ºF and bake for 15 to 20 minutes or a light brown. Don’t over bake scones to make them dry!!
Bonita’s Tips:
Fry a pack of bacon very crispy, chop into small pieces and remove ¼ cup and put the remaining of bacon bits in a mason jar with lid. Store in fridge for a week to enjoy in your favourite meals or toss salad.
Pour bacon fat in a bowl and let cool and harden in the fridge to use for this recipe or other recipes.
To reduce salt use unsalted bacon or butter.
Use vegetarian bacon if desired. Store in fridge for a week to enjoy in your favourite meals or toss salad.

Then remove the dough from fridge and place on a floured countertop to roll out, 1/2 inch thick is good and shape the dough square.
